Recipe: Mango Barfi, Chita Roti and French Fries

Welcome to another kazisilo recipe. today We'll see how to prepare mango barfi, chita roti and french fries.



1. Mango Barfi:

Materials:

1. Mango kath – 2 cups (ripe mangoes should be blended to make kath)

2. Butter or ghee – 4 tbsp

3. Grated coconut – 1 cup

4. Mawa- 1.5 cups (Condensed milk can be used instead of mawa)

5. Sugar- 3/4 cup (if using condensed milk add sugar as per taste)

6. Garam masala powder – 1/4 tsp

7. Salt is little

8. Orange food color – 1/8 tsp

9. Nuts for garnishing



Method:

Take butter or ghee in a pan and heat it on low flame. Now add mango and keep stirring. Be careful not to burn the bottom. When the water dries up, add garam masala powder, salt, sugar and grated coconut and mix well. Add mawa. Now add orange food color and mix well. Stir when the mixture becomes sticky, pour it on a tray with ghee, spread it evenly with your hands, sprinkle almond flakes on top, cut into squares and serve in a dish of your choice.



02. Chita Ruti (Chita Pitha):

Materials:

1. Rice flour – 2 cups (makes 12-15 loaves)

2. Water – 3 cups

3. Egg – Half of 1 egg beaten

4. Salt in moderation

5. Oil quantity


Method:

- Add enough salt and 3 cups of water to the bowl, mix well. When the salt-water is mixed, mix well with 2 cups of rice powder. A thin mixture will form.

- Mix half of 1 egg well with the mixture. Leave the mixture in this condition for 15 minutes.

– After 15 minutes dip your hands in the mixture coated with oil in a kadai and sprinkle the kadai, i.e. shake your fingers over the coated oil. Dip your hands in the mixture 3/4 times for each roti and sprinkle it in the pan successively. The heat of the stove will be reduced. Be careful not to burn the bread. When the bread is done, lift it gently so as not to break it. The bread will already be too thin so it won't look good if it breaks.

- In this way make thin bread by sprinkling it 3/4 times with a light coating of oil each time. Keep the breads warm before serving.

- If the mixture is like freezing, mix it well again, if necessary you can mix some water (a little) and shake it well, it will become liquid.

– Serve hot roasted meat or soup meat with bread, salad can be as per choice.




03. French Fries

Materials:

1. 1 kg french fry shape potatoes

2. 1 teaspoon of salt

3. 1 tablespoon of vinegar

4. 2 teaspoons of beet salt

5. Oil for frying


Cooking Method:

- Cut potatoes and rub salt and vinegar on them. Heat the water and leave the potatoes in it. Boil for 10-12 minutes and put it in a strainer and discard the water. Allow the potatoes to cool down and heat the oil in the frying pan.

- Then leave all the potatoes in the oil. Stir for a while and bring it down within 1 minute. The oil should be strained through a strainer. After that, the potatoes should be spread on the tissue to drain the oil completely. It will remove excess oil.

- Then take the potatoes in a container and keep them in the deep freezer for at least 3-4 hours.

- Then you have to heat the oil again in the oven as before. Then take out the potatoes from the deep freezer and leave them in the hot oil.

- Potatoes should be stirred after some time after putting them in oil. After frying like this for 4-5 minutes, take it down and drain the oil.

- Then sprinkle some salt on French fries and serve hot with tomato sauce.


Caution: If water falls on hot oil, the hot oil splashes around, which can cause blisters if it comes in contact with skin. Deep freezing potatoes cause water to stick to them. For this reason, it is better to keep a safe distance while wearing gloves while dropping potatoes in hot oil.
